Introduction

Great for dinner, lunch or breakfast. This recipe can be made even lighter with skim milk and reduced fat cheese and chx breast meat. Frozen, shredded potatos are a great substitute! Number of Servings: 6

Ingredients

    Three small to med. potatos, peeled and shredded
    2 Tbsp. butter, melted
    1 cup chicken, chopped
    3/4 cup swiss cheese, grated
    1 cup shitake mushrooms
    5 large eggs
    1 cup 1% milk
    salt and pepper to taste

Directions

Preheat oven to 450. Shred potatos, (press out any water) and form into bottom and sides of pie plate. Brush with melted butter and cook for 20-25 minutes. Remove from oven and reduce temp. to 375. Place chicken, cheese and mushrooms into bottom of pie. Whip eggs and milk, pour them our over pie. Cook for 45-50 minutes or until knife stuck in middle comes out clean.

Serving Size: 6 (slices of 9" pie)
