Preheat oven to 350.
Line muffin tin with paper liners; spray each with nonstick spray. (Makes 16 muffins.)
In food processor grind oats and turbinado sugar until fine. Remove oat mixture to bowl.
In food processor combine beans, yogurt, and eggs. Blend well. Add vanilla and mix until blended. Transfer to the bowl of an electric mixer.
Mix cacao, baking powder and salt with the sugar/oat mixture.
Add dry ingredients to wet all at once. Mix on low until moist, then increase mixer speed to high and beat until smooth, about 30 sec.
Divide batter among 16 lined muffin cups. Bake for 20 to 25 minutes, until cake springs back when you touch it with your finger.
(The real recipe calls for a full can of black beans and no yogurt, but that was all I had. You could omit yogurt and add the rest of the can of beans.)
Calories: 115 per muffin.
