    1 1/2 C very warm water (~100 degree Fahrenheit)
    3 TBS Brown Sugar or Honey
    1/3 tsp Salt
    2 C King Arthur White Whole Wheat Flour
    1/2 C Rye Flour
    1/2 C Graham Wheat Flour
    1/4 C Bread Machine Flour
    1/4 C Whole Oats
    2 TBS Wheat Germ
    2 TBS Ground Flax Seed meal
    2 TBS Skim Milk Powder
    2 TBS Vegetable Oil
    4 tsp Vital Wheat Gluten
    2 tsp yeast


Put ingredients into bread maker in order given by manufacturer's instructions (I do mine in the order given in recipe).

Set Machine to desired crust color, I like mine at light. Set your machine for Wheat bread and a 2 pound loaf.

Push start.

If you are making this by hand, substitute the bread machine yeast with active dry yeast, proof it in the water in a separate bowl while you combine all other dry ingredients. Add the oil to the water, then add the dry ingredients to the wet ingredients. Knead by hand till everything is incorporated. Let rise till double in volume in a warm place in your kitchen. I like to set a very large stainless steel bowl over mine - helps it rise. Punch down and kneed well for a few mintues, shape into loaves, put in bread pans that have been sprayed with pam, then allow to rise again for about 40 minutes. Bake at 350 for about an hour or until crust sounds hollow when you tap on it.
