    •18.25oz Devil’s Food cake mix
    •12oz Diet Coke
    •1 large egg white
    •10oz bag of Reese’s peanut butter chips
    •1/2 cup softened light butter
    •1 cup (good quality-I use Jiff Natural) creamy peanut butter
    •2 cups confectioner’s sugar
    •3-4 T almond milk (or other milk of your choice)


1. Preheat oven to 350F. Add cake mix, diet coke, and egg white to large bowl. Beat with mixer until smooth and fluffy. Using spatula, fold in peanut butter chips.
2. Divide mixture into paper lined muffin tin (makes 20-21 cupcakes) filling 2/3s full.
3. Bake for 25-30 minutes (check using the toothpick test). Completely cool before frosting.
4. Cream together butter and peanut butter in a medium bowl.
5. .Add confectioner’s sugar in 1/2 cup batches alternating with 1 T milk. Beat until smooth and fluffy. Frost cupcakes.
