    1 Tbsp canola oil
    1/2 c chopped onion
    1 1/2 c sliced mushrooms, fresh
    1 1/2 c baby spinach leaves
    3 eggs, beaten
    1/4 c skim milk
    1 1/2 oz feta cheese, crumbled


Cook onions in canola oil 2 minutes. Add mushrooms and cook until mushrooms are done. Add spinach, cook until barely wilted. Add eggs beaten with milk and cook until almost fully set. Add feta and finish cooking. Top with fresh ground pepper.
