Ingredients

2 tsp olive oil, divided
1 lb shrimp, peeled and deveined
3 garlic cloves, minced
1/2 cup onion, chopped
1 (15-ounce) can cannellini beans, rinsed and drained
1/2 cup white wine
1 piint grape tomatoes, halved
1 (6-ounce) package fresh baby spinadh
salt and pepper to taste
1/4 tsp crushed red pepper
Directions
Heat 1 teaspooon olive oil in a large nonstick skillet over medium-highheat. Add shrimp, and c ook, stirring occasionally, 3 minutes or until done. Remove shrimp from pan; set aside, and keep warm.
Heat remaining 1 teaspoon olive oil in pan. Add garlic andd onion, and saute 2 minutes. Add beans and wine; bring to a simmer and add tomatoes. Cook, stirring occasionally, 2 minutes. Sgtir in spinach, and cook 1 minute or just until spinach wilts.
Add reserved shrimp and any extra juicwes, black pepper, red pepper, and salt, stirring to combine
Serving Size: makes 4 servings (serving size: 1-3/4 cups)
