Introduction

This is my favorite clean eating breakfast on an intense workout day. I top mine with a cup of frozen (unsweetened) berry blend that I've made into a "syrup" by microwaving in 1min intervals, stirring each time, for up to 3 min (only a minute at a time unless you like cleaning sticky exploded berries out of your microwave!). Ingredients

    3 Egg Whites
    .25 cup 2% cottage cheese
    .25 cup rolled oats
    2 scoops vanilla or plain protein powder
    2 Tbsp ground flax seed
    2 Tbsp wheat germ
    .5 tsp baking soda
    .5 Tbsp canola oil
    Ground cinnamon to taste

Directions

Throw all ingredients into a blender or food processor. Mix thoroughly. Cook as large pancakes in nonstick skillet. Eat plain or top with warm fruit or maple syrup.

Serving Size: Makes 3 6" pancakes
