    1 large onion, sliced
    1/4 cup butter
    2 cups red or brown lentils, rinsed
    5 cups of beef stock (or water with boullion)
    Bay leaf

    (This recipe was made with a combination of home made beef stock with additional water and boullion. I did not use a boullion cube for every cup of water.)


Melt butter in a large soup pot. When hot, add onions and "sweat" the onions over low heat with the lid on the pot. Do this until the onions are very mushy.

Add the broth, lentils, and bay leaf. Bring to a boil then simmer until lentils are soft. Remove the bay leaf. Puree the soup with a hand blender or in a conventional blender. For very smooth soup, strain with cheesecloth or a fine sieve.
