These delicious, filling tostadas are a great source of fiber! These delicious, filling tostadas are a great source of fiber!
Number of Servings: 5


    5 whole-wheat pitas
    2 cans fat-free refried beans
    2 cups salsa
    1.5 cups low-fat cheddar cheese, shredded
    2.5 cup, shredded lettuce
    1 cup chopped tomatoes
    1 cup chopped scallions (green onions)
    10 Tbsp. Lucerne Fat Free Sour Cream


Makes 5 individual tostadas.

Preheat oven to 350°

Mix together the salsa and refried beans. Place the pitas on a cookie sheet and then top evenly with the bean mixture. Sprinkle with cheese and then bake for 20 minutes or until heated through and cheese is melted.

Remove from oven and let cool slightly. Top each tostada with 1/2 cup lettuce and 2 Tbsps of sour cream. Sprinkle with chopped tomatoes and green onions.
