    2 tsp. olive oil
    1/2 c. chopped onion
    1/3 c. Israeli couscous
    1 c. fat-free chicken broth
    1 can black beans, drained
    1 tsp. minced chipotle chile
    1 can stewed tomatoes


Heat olive oil over medium-high heat.
Add onion and couscous and saute until onions are soft and couscous is toasted.
Add chicken broth and bring to a boil. Cover and reduce heat. Simmer 5 minutes.
Add beans, chile, and tomatoes. Cover and simmer until couscous is tender.

Serve with sliced green onions, chopped cilantro, and fat free sour cream.
