    3 Egg,
    1 Cup Milk, 1%,
    2 tsp Granulated Sugar,
    1 Cup Flour, white,
    2 tbsp Flax Seed Meal (ground flax),


Combine the eggs, flour, flax and sugar, mix well until no lumps are found. Add the milk and mix well. Set aside for 10 minutes. Heat frying pan which has been sprayed with cooking spray. Pour a small amount of batter (which will be runny) and coat the pan completely with the batter (the crepes will be very thin) Let cook for a few moments, just until the top of the batter sets, turn over and cook for a few more minutes. Turn out onto a plate and continue with the next crepe. You can fill these with fresh fruit, fold over and top with low-calorie whipped cream. Can be filled with any fruit combination or just about anything you would like - as well by omitting the sugar you can make this into a savory crepe, filled with cheese, smoked salmon anything!! Enjoy
