Ingredients

    1 Green pepper
    1/4 cup quinoa, uncooked
    1 cup salsa



Directions

1. Preheat oven to 350.

2. Combine quinoa and 1/2 cups water in a saucepan. Bring to a boil, reduce to a simmer and cover, cook for 15 minutes. Rinse with cold water.

3. Add salsa to saucepot. Heat until bubbling.

4. Cut pepper in half and scoop out seeds and membranes. Stuff 1/2 of quinoa mix into each half pepper. Bake for 15-20 minutes.
