    3 small onions
    2 celery stalks
    4 medium carrots
    1 small turnip
    1 small zucchini
    1 large green pepper
    1/2 tbsp dried garlic
    1 can diced tomatoes
    5 cups water
    4 tsp vegetable bouillon
    1 tbsp canola oil
    1 tbsp crushed red pepper or Cayenne Pepper
    1 can (5.5 fl oz) tomato paste


1. In a large soup pot, sauté the veggies and garlic in oil on medium-high heat until the onions are translucent. Add the water, bouillon, tomatoes, lentils, pepper, and cayenne and bring to a boil. Reduce heat to low and simmer for 20 minutes or until carrots are tender.
2. Remove some of the lentil and veggies and mash. Add back to the soup and stir. Add 1 can of tomato past to thicken broth.
