Ingredients

    1 1/2 Cup Oats
    1/2 Cup Flaxmeal
    1 tsp Baking Soda
    1/4 tsp Salt
    1/4 Cup Sugar
    I Cup Canned Pumpkin
    1/4 Cup Vegetable Oil
    1 tsp Vanilla Extract
    1/4 Cup Soymilk (or water)
    1/2 Cup Ground Walnuts
    1 Cup Chocolate Chips

Directions

Blend oats in blender or food processor to make flour. Mix dry ingredients and wet ingredients separately, then mix together. Bake at 350 for about 12 minutes.

Serving Size: makes 24 cookies with 2 inch diameter
