Number of Servings: 4


    Beans will take 3 hours:
    2 cups Pinto beans
    2 -3 tsp bacon grease (Skip only if you are a vegetarian. The refried beans will be flavorless without this)
    8 cups water
    1/2 tsp salt

    Refried beans will take 20 minutes:
    ½ cup milk
    ½ cup shredded cheddar cheese
    1 small onion chopped
    1 garlic clove minced
    1 tomato diced
    1 tsp Chili powder

    4 tortillas
    ½ cup Shredded cheddar cheese
    4 Romaine lettuce leaves
    8 tsp sour cream
    8 tsp salsa


You can cook raw pinto beans in about 3 hours. Start with 6 cups of water (add 2 more as needed), add ½ tsp of salt and 2-3 tsp of bacon grease to 6 cups of water. Add 2 cups of pinto beans in the water and bring to boil. Simmer for 2 ½ hours . During the last ½ hour, continuously stir “the skin” into the beans. By the skin, I mean the thickening on the water surface and what builds on the sides of the pot. This will be every few minutes so don’t walk away.

You can double or triple the recipe for later meals. Refrigerate the cooked beans overnight.
The next step can be done the next day with the cooked beans.

This part takes about 20 minutes. Use a potato masher to mash the beans. Stir in ½ cup of milk & ½ cup of cheese while continuing to stir. Add chopped onion, minced garlic clove, diced tomato and tsp of chili powder. Put refried beans on very low while heating tortillas on flat skillet.

Serve about ¼ cup of refried beans per tortilla. Dress with 1 tsp of sharp cheese, 1 chopped lettuce leaf, 2 tsp on sour cream, 2 tsp of salsa.
