    1 3/4 cups self raising flour
    1 tsp baking powder
    1/4 cups super fine sugar
    1/2 cup finely chopped pecans
    1 tbsp instant coffee
    1 tbsp hot water
    1 egg
    2/3 cup half and half (or milk)
    1/3 cup oil ( I used coconut oil)

    streusel topping:
    1/4 cups self raising flour
    2 tbsp butter
    2tbsp brown sugar
    1 tsp cinnamon
    2 tbsp finely chopped pecans


Combine the dry ingredients, make a well in the centre. Combine the instant coffee with the boiling water and stir until dissolved. Cool and add to the flour mixture. In a spearate bowl, combine the egg, milk and oil Add to the flour mixture and stir until just combined. Do not over mix. To make the topping place the flour into a mixin bowl. Rub the butter into the flour until the mixture resembles carse breadcrumbs. Add the sugar, cinnamon and pecans and mix until well combined. Spon the muffin mixture into the prepared muffin holes. Sprinkle with tthe topping and bake for 10 to 12 minutes.
