    4 qts Basic Beef Stock
    1 head Red Cabbage, cored and shredded
    4 ea Beets, washed and shredded
    4 ea Carrot, shredded
    6 ea Potato, peeled and shredded
    1 ea Tomato, diced

    0.5 Tbsp vegetable oil
    1 ea onion sliced very thinly or minced finely
    0.5 c Tomato paste

    2 c Sour cream


You may want a food shredder for this, or a lot of patience and a strong arm! Shredding all of the vegetables (aside from the tomatoes) will make the cooking process a lot faster.

Bring beef stock to a simmer. Add beets, simmer for 5 min. Add carrots and potatoes, cook until tender, or about 10 min. Add cabbage and tomato.

In a small sauté pan, heat vegetable oil until it shimmers. Sauté onions and tomato paste until onion is translucent. Add to the pot.

Simmer for another 15 mins. To avoid adding salt, add a little vinegar for flavor.

Top each portion with 1 oz sour cream and enjoy!

Serving Size: Makes 1.5 gal soup, can feed 12-16
