    2 medium yellow onions, chopped
    4 cloves garlic, minced
    2 green bell peppers, chopped
    2 pounds ground chuck beef
    14 ounces tomatoes, canned, drained, chopped
    4 ounces green chilies, canned, chopped
    2 Tsp ground cumin
    1 Tbsp dried oregano
    1 Tsp cayenne pepper
    1 Tsp freshly ground black pepper
    1 Tsp salt
    1 cup beef or chicken broth
    1 medium head of cauliflower, cut into florets


1. In a saute pan, saute the onions, peppers, and garlic until they start to become soft
2. Next add in the ground beef and cook until brown, then drain off the excess fat
3. Transfer the meat and vegetables to your crock pot
4. Add all the remaining ingredients and mix well
5. Cover and cook on low for 6 Hours
6. Enjoy and serve over a bed of Cauliflower Rice

For the Cauliflower Rice:

Need: 1 Head of Cauliflower, cut into florets


1. Place all of your Cauliflower florets into your food processor and blend down until you get the texture and consistency of rice
2. Transfer to a microwaveable safe dish and cover, DO NOT ADD WATER
3. Microwave on high for 5 minutes, remove from microwave, add some salt, pepper, and garlic to taste and serve
