    Onions, raw, 1 large
    Potato, raw, 1 large
    Carrots, raw, 1 large
    Curry powder, 2 tbsp
    Pepper, red or cayenne, 1/4 tsp.
    Chicken Broth, 3 15 oz. cans
    Del Monte Diced Tomatoes, No Salt Added, 28 oz. can
    Lentils, 2 cups


Add all ingredients to the slow cooker, and cook on low for 10 hours. Season soup to taste with salt and pepper. (Can be made up to 2 days ahead. Refrigerate until cold; cover and keep refrigerated. Before serving, rewarm soup over low heat.)
