    3 large bell peppers, chopped.
    1 small red onion, chopped
    1 cup grated carrots
    1 lb ground beef
    1 c. shredded colby jack cheese
    1 cup Quinoa


Sautee the beef.

Sautee peppers and onions.

Cook quinoa according to package directions.

Mix all ingredients together, and microwave on high for 10 minutes. Stir halfway through.
