Ingredients

    1 cup RAW cashews (no raw in database, do NOT use roasted)
    1 clove garlic
    1/4 tsp salt
    1 lemon's juice
    water as needed

    1 big bunch Kale, stemmed, torn and "scrunched" to soften
    1 package salt-packed sea vegetables, rinsed, soaked for 5 minutes, then drained. (Kelp noodles are also great in this)

Directions

Put all the dressing ingredients in a small food processor (I use the one that came with my stick blender) and process till it's the consistency of caesar salad dressing. Taste for seasoning and adjust as needed. It's ok to make it a bit on the salty/lemony side, since it'll be up against the bitter, strong flavor of the kale. Err on the runny side, but should be thicker than a typical salad dressing.

Toss with the kale and sea veggies. Try not to eat all in one sitting. Or actually, you can, because it's totally good for you!
