    2 C low sodium chicken broth
    2 C low sodium, low fat marinara sauce
    15 oz can chickpeas, drained
    1.25# lean ground turkey
    1/4 C whole wheat bread crumbs
    1 egg white
    10 oz fresh baby spinach


Place turkey in a large bowl. Mix in bread crumbs, egg whites and preferred seasonings. ( I used dried italian seasonings). Form into balls using pampered chef 2 Tbsp measuring scoop.

Heat a nonstick pot. Add meatballs and brown on all sides. Pour in chicken broth, marinara, and chickpeas. Cook 10-15 minutes on medium heat stirring occassionally and avoiding breaking up the meatballs.

Add spinach. Cook untiil wilted about 5 minutes.

Serve 1 C with shredded parmesan cheese ( not included in calorie count)
