    1 egg
    1 TB coconut oil, melted
    1/4 cup pumpkin
    1/8 cup SF maple syrup
    1 TB gingerbread Torani
    4 TB flaxseed
    1/4 tsp. glucomannan (optional; adds fiber and improves texture)
    1/2 tsp. baking powder


Mix dry ingredients; In a separate bowl, mix wet ingredients until egg white is thoroughly blended (no strings), then combine wet and dry ingredients and mix well.
Microwave 2-3 mins. The cooking time really varies by microwave; the batter will pull away from the walls of the cup as it sets up, so after 2 minutes check the bottom and see if it's still goopy; if it is, cook longer, checking it every 30 sec. until it's done. It will keep cooking for a bit after you take it out, so don't overdo it (it gets a bit tough when overcooked).
