Introduction

Ingredients

    Wheat bran, .25 cup
    Wheat flour, white, unbleached, enriched, 2.75 cup
    1/2 cup mashed potato
    Oil, .25 cup
    Fage - 0%, 1/2 cup
    Yeast, bakers, 1 ounce
    Salt, 1 tsp
    Granulated Sugar, .33 cup
    1/2 cup water from boiling potato

Directions

Boil potato until easily mashable. Reserve the cooking water, and dissolve the sugar in 1/2 cup of it. Then (making sure the water is still fairly warm, but not too hot), add the yeast to proof.

Meanwhile, mash potato and add yogurt. Mix well (hopefully this warms the yogurt, if not, microwave for a few seconds). Then mix in the oil- stir well.

In another bowl, combine flour, bran, and salt. Stir well.

Mix proofed yeast and liquid into yogurt-potato mixture. Then mix into the flour. Knead into well combined (not too much. Dough will be a bit sticky).

Let rise in a warm place until doubled (45 mins to 1.5 hours).

Put dough in a greased loaf pan. Let rise (about one half hour).

Preheat oven to 375.

Turn over down to 350 when you put loaf in. Bake 30-40 minutes, or until the loaf sounds hollow when you rap on the bottom.
