    *Boneless Skinless Chicken Breast - Raw, 32 oz
    *Fiber One Bran Cereal, 1/2 cup
    *Flax Seed Meal (ground flax), 4 tbsp
    *Nutritional Yeast, 3 Tbspn
    *Wheat bran, crude, .25 cup
    *Kosher Salt, 1 tsp
    *Pepper, black, 1 tsp
    *Paprika, 1 tsp
    *Onion powder, 1 tsp
    * Garlic powder, 1 tsp
    *Sage, ground, 2 tsp
    *Extra Virgin Olive Oil, 1 tsp? (a few sprays w/ the Misto)
    * Egg, fresh, 1 large


Pulse dry ingredients in food processor to combine. Empty onto a wide plate or Pyrex dish. Whisk egg. Thaw (if needed), rinse & pat dry chicken tenders. Brush chicken with egg wash. Allow excess to drip off. Roll chicken in crumb mixture to coat. Lay on a baking pan that has been previously sprayed lightly with olive oil. Spray top of chicken lightly with more olive oil. Bake @ 350 for 15-20 min on each side, let cool. Place pieces in gal. Ziploc bag spaced apart; lay bag on cookie sheet and put in freezer. After a couple of hours the bag can be moved and stored more efficiently in the freezer. To reheat, defrost & bake in preheated oven @ 425-450 degrees for 10 min.

Serving Size: Makes approx. 15 "tenders", around 2 oz. each.
