Ingredients

    Beef, top sirloin, 32 oz - trimmed and 1" cubed
    Beef stock or boullion - 1C
    Crushed Tomatoes, 567 grams - 1 lrg can
    Tomato Paste, 1 can (6 oz)
    Onions, raw, 2 cup, chopped
    Garlic, 6 cloves
    *Peppers, sweet, red, fresh, 1 cup, chopped
    *Green Chili Peppers, canned, 1 cup - hatch peppers are great for this chili
    *Crisco Pure Vegetable Oil, 2 tbsp

Directions

brown meat in vegetable oil - a little at a time and remove when finished. Brown chopped onions and garlic in meat pan for 3-4 minutes; add peppers and chilis, sautee for another 3-4 minutes. Add meat back into pan; add tomato paste and crushed tomatoes; add beef stock or concentrate (about 1 C) to taste. Add spices as you like - simmer gently for 3 hours. Should be thick and spicey when you are finished. Top w/ low fat shredded cheese, dollop of low fat sour cream and chopped cilantro - yummy!!
