Introduction

This is a good way to use up the meat from those chicken legs I used to make chicken soup stock with the other night.
The meat is already cooked so everything is easy. Just add everything to the slow cooker and when you get home dinner is served.

Ingredients

    6 chicken legs, precooked, skin and bone removed
    15 to 20 mini potatoes (1" in diameter max), cut in half
    8 ounces carrots cut in slices
    2 cups fresh or frozen peas (fresh preferrably)
    8 ounces whole mushrooms cut in quarters
    2 tsp Mrs Dash Garlic & Herb seasoning
    2 tsp Mrs Dash Original Blend
    2 tsp Mrs Dash Southwest Chipotle
    2 tsp Epicure Selections, red garlic "sans sel"
    1 tbsp Epicure Selections, Adobo seasoning
    2 tsp Celery seed
    2 cups, "no salt added" chicken broth

    To thicken stew juices:
    1/4 cup cornstarch
    1 cup water
    2 tbsp Epicure Chicken Bouillion

Directions

Add chicken to slow cooker, adding in mini potatoes, carrots, peas, and quartered mushrooms.
Add in spices, and the chicken stock.
Set slow cooker on low for 8 hours.
When time is up, thicken the liquid from the stew by adding in the bouillion/cornstarch/water mixture.
Serve with a salad for a hearty meal.
