Introduction

Ingredients

    2 large eggs, beaten
    1 medium apple, peeled and sliced thin
    1 tsp cinnamon
    1 packet stevia
    1 tsp vanilla
    1 tsp coconut oil (or olive but not in calorie count)

Directions

Slice peeled apple very thin. Melt tsp of oil in small skillet. Place apple in a thin layer in bottom of pan. Cover and cook on low until soft. Meanwhile whisk eggs, stevia, cinnamon, and vanilla together. Once apples are soft, pour egg mixture over the top. Cook by lifting edges to allow runny eggs underneath. Once there is no egg to run, cover and cook for another 1-2min. Uncover and flip over. Cook until eggs are done. Enjoy!
