Introduction

Ingredients

    1 cup dry Bob's Red Mill Vegi Soup Mix
    3 cups vegetable broth (fat free)
    1 tsp Better Than Bouillon Vegetable Base
    1 1/2 cup filtered water
    1 large carrot sliced into rounds
    1/2 small yellow onion, diced
    1 large stalk of celery sliced thinly
    1 yukon gold potato (5 oz) chopped
    1 cup baby brussels sprouts
    1/2 tsp sea salt
    1 tsp parsley flakes
    1 large handful of baby spinach leaves (fresh)

Directions

Simmer soup mix in broth water, and bouillon for 30 min. Add chopped fresh vegetables. Bring to a boil then lower heat to simmer and cook till tender (approx 1 hour.) After veggies are tender, add seasonings. May need to add a bit more water at this point. Add spinach just before serving and let it wilt into the soup. Serve with crusty whole wheat bread.

You could use whatever kitchen vegetables you have available to vary this recipe. I used leftover broth from cooking chickpeas as my vegetable broth. It was delish!
