Ingredients

    Canned Chickpeas, 1 cup
    Amaranth Grain, 1/2 cup
    Mushrooms, fresh, 1 cup, pieces or slices
    Onions, raw, 1 cup, chopped
    Pacific Natural Foods Organic Low Sodium Vegetable Broth, 1.5 cups, room temperature
    Extra Virgin Olive Oil, .5 tbsp

Directions

Cook onions in EVOO until translucent, add mushrooms and olives. Cook until soft and incorporated, and the onions are just starting to brown.
Add the broth and bring to a boil. Add the amaranth and cook until it's a texture you like - this can take up to 30 minutes. Add the canned chickpeas in at the end to keep it warm.
