    1 onion, diced
    1 clove garlic, minced
    1 T. olive oil
    1 bunch swiss chard or collards, washed and chopped
    2 sweet potatoes, peeled and diced or sliced into small pieces
    1 16 oz. can diced tomatoes
    1 15 oz can garbanzos, drained
    1/2 cup raisins
    1/2 cup rice
    Tabasco to taste, if desired
    salt and pepper to taste


use a Large skillet with a lid--especially if you pick chard from your garden and use a very generous bunch. Heat the oil in the skillet and saute the onion and garlic until the onion is translucent. If you're using swiss chard, do not discard the stems, but chop them separately from the leaves and saute with the onions. Add the chard leaves, sweet potatoes, UNDRAINED tomatoes, drained garbanzo beans and raisins and simmer about 10 minutes, uncovered. Make a hole in the center of the vegetables and pour in the rice. Cover the rice with vegetables, put the lid on the pot and simmer on low heat about 20 minutes. Check after about 15 minutes to see if you need to add a little water. Season to taste and enjoy. This freezes well, and is a surprisingly good cold weather breakfast when you're tired of hot cereal.
