    1.25lb ground turkey
    2 cups zucchini, diced (about one small zucchini)
    1/2 cup carrots, sliced
    1/2 cup celery, diced
    1/2 cup green pepper, diced
    2 cups fresh spinach
    28oz petite cut tomatoes
    15.5oz Great Northern beans
    15.5oz Light Red Kidney beans
    11oz sweet corn
    1 packet low-sodium beef broth
    1 packet onion soup mix
    2 cups water
    1/2 tbsp oregano
    1/2 tbsp basil
    1/2 tbsp chili powder
    1 tsp garlic powder
    1/2 tsp black pepper
    1/3 cup peanut butter (just about 6 tbsp)


Brown turkey in a pan. Then combine all ingredients in slow-cooker and cook over low heat for at least 3-4 hours. May also be heated on stove in a pot on low heat.

Serving Size: makes 12 1-cup servings
