I made one for dinner and cut the other into portions and froze. The calorie count is high but perfect for a rainy day and if planned into your day! Ingredients

4 Chicken Sauage Links - chopped
1 cup fat free ricotta cheese
1 cup 50% reduced fat cheddar cheese
1 cup reduced fat mozerella cheese
1 cup of sliced mushrooms - may add more depending on prefrence
12 large eggs
1 package of frozen spinach - dethawed
2 9" frozen pie crusts
Directions
Dethaw spinach ahead of time, as this can take some time. Chop sausage links and lightly brown in pan. Mix all ingredients together in large mixing bowl, excluding pie crusts.
Fill pie crusts and bake in oven at 400 degrees for 35-40 minutes.
