Ingredients

    3 Chicken Breasts, each cut in half
    1 whole bag of Pork Rinds
    1 Tbs. dried Parsley
    1 Tbs. Italian seasoning
    1 tsp. Paprika
    1 Tbs. shredded Parmesan Cheese
    1/4 cup olive oil
    1.5 cup spaghetti sauce, no added sugar
    6 Tbs. shredded Parmesan Cheese

Directions

1. Pulse pork rinds in food processor with parsley, Italian seasoning, paprika & 1 Tbs. parmesan cheese to the consistency of bread crumbs. Transfer to a tray for dipping.
2. Beat eggs in a second tray.
3. Dip each piece of chicken in egg then in the pork rind mixture.
4. Fry in olive oil 3 minutes on each side.
5. Put chicken in greased baking dish, cover each piece with a cup of spaghetti sauce & 1 Tbs. of parmesan cheese. Bake at 375 degrees for 15 to 20 minutes.
