Introduction

This is sort of a "Frankenstein" recipe. I took 3-4 different recipes that looked good to me and played mix-match-and-modify. The bread is delicious on its own, but the optional dusting and crumble topping make it awesome.

Dishes:
1 baking dish, 9in x 13in , OR 2 loaf pans, 5in x 9in
1 small bowl
1 small microwavable bowl
3 mixing bowls (small, medium, large)

Ingredients

    PAN DUST:
    --1/8 cup sugar
    --1 Tbsp cinnamon
    --butter or shortening

    CRUMBLE TOPPING:
    --2 Tbsp melted butter
    --1/4 cup brown sugar
    --1/4 cup coarsely chopped/hammered glazed pecans
    --3 Tbsp flour
    1/2 tsp cinnamon

    BREAD:
    --3 medium overripe bananas
    --1 cup plain fat-free Greek yogurt
    --1 1/3 cup brown sugar
    --1/2 cup cinnamon applesauce
    --2 large eggs
    --2 cup flour
    --1 tsp baking powder
    --1 tsp baking soda
    --1/4 tsp salt


Directions

***PREP***
PAN DUST
--In small bowl, mix sugar and cinnamon.
--Grease baking dish(es) with thin layer butter/shortening and lightly sprinkle cinnamon-sugar mix on bottom and sides.
--Preheat oven to 350 F.
*Note: there's no need to be precise in the sprinkling, and you may have some leftover...wrap it up and save it for cinnamon toast!

CRUMBLE TOPPING
--In microwavable bowl, melt butter in microwave (~30 seconds)
--In small mixing bowl, combine all other ingredients.
--Pour in melted butter and continue mixing till crumbly.

BREAD
--In medium bowl, mash and stir to combine banana and Greek yogurt. (Bananas should be fully mashed but slightly chunky.)
--In large bowl, thoroughly mix brown sugar, applesauce and eggs.
--Pour/scrape banana-yogurt mixture into large bowl and mix.
--Stir remaining (dry) ingredients into wet mixture.

***BAKE***
--Pour/scrape batter evenly into baking dish(es).
--Sprinkle crumble topping relatively evenly over the top.
--Bake at 350 for 55 minutes (test with toothpick)
*Note: if opting NOT to use crumble topping, bake time will be 50 minutes. Trust your toothpick.

Tastes AMAZING right away, but let it cool a bit if you want to use butter or cream cheese.
