    2 1/2 C flour, white all-purpose (plus some when forming the logs to prevent sticking)
    1/2 C unsweetened cocoa powder
    pinch salt
    1/2 teaspoon baking soda
    3/4 teaspoon baking powder
    4 large eggs
    1 1/3 C sugar, granulated
    1/2 C chopped hazelnuts


Pre-heat oven to 350 degrees farenheit.

Sift together flour, cocoa, salt, baking soda, and baking powder.

Beat together eggs, and beat in the sugar.

Slowly add dry ingredients to the egg mixture, until all is combined. (I found mixing by hand the easiest way to get the correct consistency.)

Divide dough into two portions, flatten out each one, add half of the hazelnuts, and fold into each portion. Shape each dough portion into a log about 12 inches long by 2 or 3 inches wide. Place each log onto a baking sheet sprayed with nonstick spray.

Bake in the oven for 20 minutes (or until top is firm to the touch). Let logs cool for 5 minutes, and then cut each log on a diagonal into 15 portions. Bake for another 10 minutes, or until crisp. Let the biscotti cool completely.
