Introduction

My next door neighbour Vijaya is a Manglorean and makes delicious Neer Dosais and Appams.Her Sweet Appams are truly delicious and crisply light and can be eaten as a Dessert or an Evening Snack.By fermenting the Batter one need not add any Yeast or Baking Powder/Soda as these come out extremely light and fluffy by themselves.These are made in a special Cast Iron Pan called the Appa Chatti which is these days available in the Market in a healthy Non-Stick format too.These can be eaten by themselves or dipped in Rasaayan or sweet Spiced Coconut Milk.They taste great either way but I prefer these by themselves!!! Ingredients

    INGREDIENTS
    SWEET APPAMS
    (TOTAL CALORIES 150,TOTAL FAT 7.3,SATURATED FAT 0.1)
    400 gms. Kurmurey/Churmurey(Puffed Rice)
    200 gms. Coarse Rice
    50 gms. dehusked Black Gram(White Urad Dal)
    2 Over Ripe Bananas
    2 tsps. Fenugreek (Methi)Seeds
    1 dash of Salt to taste
    COCONUT RASAAYAN (OPTIONAL)
    3Cups Coconut Milk
    150 gms. Jaggery
    1 tsp. Cardamom-Nutmeg Powder
    15-20 Strands of Saffron


Directions

PREPARATION
Pick and wash Rice and Urad Dal together.
Add Methi Seeds and soak for 12 hours in Water.
Drain the Water and grind to a thick Paste adding the Puffed Rice and the Bananas.
Cover and allow to ferment for 8-10 hours.
METHOD
Beat the Batter well and add a dash of Salt to it.
Grease the Appa Chatti with the Ghee and heat on a low flame till hot.
Place Spoonfuls of Batter in each small Slot and cover.
Allow to set and turn pale Brown and crispon the bottom side.
Turn over gently taking care not to break the fluffy little Cake.
Cook for a minute till crisp on both sides.
Repeat this process till all the Batter has been used up.
Serve hot as a Dessert by itself or with thick,freshly pressed, sweetened Spiced Coconut Milk.

Serving Size: Makes approximately about 24--30 pieces
