Ingredients

    3 italian or chorizo sausages
    2 medium onions, chopped
    1 large carrot, chopped
    1 rib celery, chopped
    4 medium potatoes, chopped
    3 cloves garlic, minced
    8 cups kale, coarsely chopped
    2 cups beet greens, coarsely chopped
    10 cups beef broth, low sodium

Directions

brown sausages and then slice. return to pot and add carrots, celery, onions and garlic. saute until softened. add potaotes and broth and cook 15 minutes or until potatoes are tender. add greens and cook until tender
