    2 small raw onions, diced
    1 carrots sliced
    1 small zucchini, diced
    2 cloves garlic,
    1/2 tsp kosher salt
    1/4 tsp red pepper flakes (optional)
    1/2 head green cabbage, cut into similar sized pieces as the other vegetables
    8 cups water
    2 cups fat free chicken broth
    1 bay leaf broken in half
    1 1/2 cups V8, Low Sodium


if using dry beans: Brine 1/2 lb of dried cannellini beans in 2 qts of cold water and 1 1/2 tablespoons of salt. for 8-24 hours. Drain and Rinse.

Brown the pancette in 1 Tbsp Olive Oil about 5 minutes. Add onions, celery, carrots and zucchini. Saute 5-9 minutes. Add garlic, salt, red pepper flakes, cabbage. Wilt 1-2 minutes. Remove vegetables from pot.

Add beans, water, chicken broth, bay leaf and a big old paremsean cheese rind. Bring to a boil. Reduce heat but simmer vigourously to thicken soup. Full simmer for about 45 miutes.

Add vegetables back in & cook about 15 more minutes. Add V8 and cook until vegetables are tehder.

Remove Parmesean Rind and bay leaf. Turn heat off. Add 1/2 cup chopped fresh basil and add more salt if needed.

when serving in bowls add more parmesean cheese and EVOO.
