    2 C baking mix
    1/2 t ground nutmeg
    1/8 t cloves
    1 C eggnog (without liquor)
    1/2 C non-fat milk
    1 large egg
    1 T olive oil (you could use veg oil, but I don't know how that would change the nutrition measurements)


makes 12 4" pancakes

Combine baking mix and spices in large bowl. Mix eggnog, milk, egg and oil together. Blend into dry ingredients, stirring until all are moistened. Cook pancakes on griddle until they have bubbles on the top and the edges appear crisp.

This recipe can be frozen. Place the cakes in a freezer container with wax paper between them. To re-heat, just put in oven on a cookie sheet for 10 minutes at 350 or pop in the microwave for one and a half to two and a half minutes.

We added the milk to the original recipe because it was too thick. If your mix is too thin, add a bit more baking mix.
