    -1kg frozen spinach
    -1 large onion
    -10 slices whole wheat toast
    -3 cups canned tomatoes
    -0.4 cup feta cheese
    -80g grated gouda cheese


-cut onion into small pieces and cook in a pot
-add spinach and add salt & pepper to taste
-fill cooked spinach into large casserole dish
-spread tomatoes over spinach
-add salt and pepper to taste
-toast the bread and cut it into cubes
-spread bread over tomatoes
-sprinkle cheese on top of it
-place in oven (~180°C) for ~15 minutes or until cheese is melted

makes 8 servings
cheese can be substituted by low fat varieties
