This is an easy and yummy dinner that is great for left overs the next day too. This is an easy and yummy dinner that is great for left overs the next day too.
Number of Servings: 9


    2 pounds of Lean Ground Turkey Breast
    2 Cups of Salsa
    1 Cup of Frozen Corn
    1 Can Black Beans (rinsed and drained)
    1 Cup Cottage Cheese 1% equally divided
    1 Cup Cheddar Cheese
    6 Soft Whole Wheat Tortillas


Brown 2 pounds of lean groun turkey breast, drain and rinse, drain and rinse one can of black beans, add to meat mixture, add 1 cup of frozen corn, and a jar of salsa. Let this all cook together for about 5 minutes.

Spray a 9x9 baker with cooking spray, put 1/3 of your meat mixture on the bottom, a 1/3 of your cottage cheese on top of that, 1/3 of your cheddar cheese, take a tortilla fold it in half and put on top of the mix. Repeat 2 times. Bake at 350 for 30 minutes and dinner is served.
