    2 c sweet potatoes, cooked and mashed
    2 T butter, softened
    2 eggs, beaten
    3/4 c sugar
    1 T flour
    1/2 tsp salt
    1/2 tsp cinnamon
    1/4 tsp baking soda
    1/2 c buttermilk
    1 tsp vanilla
    1 pie crust, unbaked


Combine the sweet potatoes, butter and eggs mixing well. Combine the sugar, flour, salt and cinnamon and stir into the potato mixture. Dissolve the soda in the buttermilk and add it to the potato mixture, mixing well. Stir in the vanilla.

Pour this filling into the unbaked pie crust and bake in a moderate oven (350) until set (about 1 hour and 10 minutes.
