    1 c. chopped onion
    1 c chopped carrots
    1 c chopped celery
    1 garlic clove
    2 t. canola oil
    1/4 c flour
    1/2 t. oregano
    1/4 t thyme
    1/4 t poultry seasoning
    6 c. reduced - sodium chicken broth
    4 c peeled, diced, uncooked potatoes
    1 t. salt
    2 c diced ROASTED chicken breast
    2 c uncooked yolk-free noodles
    1 c fat-free evaporated milk


In soup kettle, saute onion, carrot, celery and garlic in oil
Stir in flour, spices until blended, saute 1 min longer
Gradually add broth, potatoes, salt. Bring to a boil
Reduce heat, cover and simmer about 20 minutes or until potatoes are tender.
Stir in chicken and noodles. Simmer about 10 minutes or until noodles are tender.
Reduce heat, add the evaporated milk, heat to just heated through (do NOT boil).

Serving Size: makes 8 1 1/2 cup servings
