Number of Servings: 7


    Garlic, 3 cloves chopped
    Red Ripe Tomatoes, 1 large whole chopped
    Onions, raw, 1 cup, chopped
    Egg, fresh, 4 extra large
    Bread crumbs, dry, grated, seasoned, 1 cup
    Beef, round steak, 2 lbs
    3 Tbs. chopped fresh mint
    Salt, .5 tsp
    Pepper, black, 1 tsp
    *Flour, white, .5 cup
    *Canola Oil, 4 tbsp


Add 2 tbsp oil to pan, suate garlic, onions and tomatoes until soft; add to processor and process to smooth paste, set aside and let cool. Add eggs, bread crumbs, chopped mint and salt & pepper to ground beef and mix until all is incorporated. Add tomato mixture and mix in well. Heat remaining 2 tbsp of oil in pan. Form mixture into about tennis size balls and lightly coat with flour, cook until juices run clear. Serve with fresh corn tortillas or over rice with a simple tomato sauce.
