    3 Green Bell Peppers, coarsely chopped
    1 C. chopped onion
    4 cloves garlic, diced
    1 lb ground turkey or lean ground beef
    2 Cups brown rice
    1 jar (24 oz.) marinara sauce
    1.5 C. 2% Shredded Cheddar Cheese
    Red pepper flakes to taste (optional)


Brown meat with onions, garlic, green peppers and red pepper flakes if using. Drain mixture and return to pan (heat off). Add sauce, rice and 1 cup of cheese. Mix well then place in casserole. Top with remaining cheese and bake at 350 for 25-30 minutes.

Serving Size: Makes about 8 one-cup servings
