    1 medium onion, chopped
    64 oz chicken stock
    4 cloves of garlic, finely chopped
    2 cans of diced tomatoes (approx 14 oz each)
    1 can garbanzo beans, rinsed and drained
    1 can red kidney beans, rinsed and drained
    1 package frozen spinach
    1 tsp. Italian seasoning
    1/4 tsp. Dried Rosemary
    1/4 tsp. Red Pepper Flakes
    Salt and pepper


In a large saucepan, cook onions in 3/4 cup chicken stock over medium-high heat until onions are translucent, about 5 minutes. Add another 1/2 cup stock and garlic. Cook 5 minutes more. Stir in tomatoes, rest of stock, garbanzo and kidney beans, frozen block of spinach, Italian seasoning, rosemary and red pepper flakes. Bring to a boil. Reduce heat. Cover and simmer 12 minutes. Season with salt and pepper before serving if needed.

Serving Size: Makes 12 8 oz servings
