Introduction
Saw this recipe on the local news, from a local restaurant. It looked so yummy, and without all the butter and brown sugar that usually accompanies candied yam casseroles. It smells so good and tastes even better!!!My kids (2 and 3) love "Mama's Marshmallow Casserole." Saw this recipe on the local news, from a local restaurant. Ingredients
-
40 oz can of sweet potatoes
1/4 cup half and half (I used regular, but you can use fat free to remove the only fat in this recipe)
1/4 cup sugar free caramel sauce
1/2 bag marshmallows
Directions
Preheat oven to 350, spray 9x9 pan with Pam
Drain (reserve 1 cup juice) and mash the sweet potatoes until only slightly lumpy.
Add back the reserved liquid, the half and half, and the caramel sauce, mix until combined.
Pour mix into prepared pan, top with marshmallows.
Bake for 15 or 20 mins, until the marshmallows are nice and brown.
Try not to eat the whole pan in one setting!
