Introduction

Everybody LOVES this cake, and they don't even know it's good for them! This is my low-fat (1.1 gm) Honey Apple Cake for Rosh Hashana. It's moist and nobody knows it;s low fat, higher fiber (2.4 gm) and high in protein (4.9gm) and lower in sugar than most cakes (19.9gm). Ingredients

    1/2 Cup Turbanado (raw) sugar
    3/4 cup honey
    1 cup pumpkin puree
    2 eggs
    2 cups all purpose unbleached flour
    1/2 cup oats
    1 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    1 tsp ground cinnamon
    1/4 tsp allspice
    1 1/2 cups peeled and chopped apples (I use Granny Smit)

Directions

Peel and slice apples - set them aside.

Preheat oven to 325

Prepare large bundt pan by spraying with flour cooking spray.

Combine dry ingredients in small bowl.

Combine sugar and pumpkin. Mix in lightly beaten eggs. Stir in honey and vanilla.

Slowly mix dry ingredients into wet ingredients.

Fold in apples.

Pur into bundt pan and bake @ 325 for 50 - 60 minutes or until a toothpick comes out clean.

Let cool completely and serve. You may garnish with powdered sugar and a sliced apple dipped in honey.
