Ingredients

    Carmelized Onions
    2 cups sliced onions
    2 tsp canola oil
    .5 cup defatted beef broth
    .5 tbsp brown sugar
    1 tbsp balsamic vinegar

    Steaks
    4 tenderloin or top round steaks, trimmed of all visible fat
    .25 tsp cracked black pepper
    4 shallots sliced
    4 cloves garlic, sliced
    .5 cup defatted beef broth
    1 tsp red wine vinegar


Directions

serves 4
onions:
In a large no-stick frying pan over medium heat, cook the onions in the oil for 5 to 7 minutes, or until brown. Add the broth, brown sugar, and vinegar. Cook for 10 to 15 minutes, or until all the liquid evaporates. Transfer to plate.
steaks:
In the same frying pan over medium-high heat, sear the steaks for 1 to 2 minutes per side. Season with the pepper. reduce the heat to medium and add the shallots and garlic. Cook for 5 minutes. Add the broth and vinegar. Bring to boil. Cook for 1 to 2 minutes, or until the steaks are cooked through and no longer pink when tested with knife.
serve over bread (sourdough) top with onions.
